It's a Rainbow Day
I am a very big fan of Amy Sedaris' Vanilla Cupcake recipe. I've used it twice now, both times for rainbow cupcakes, and they never fail.
Not only did they appease the Almight God Wii (as I have all of the 50 cc level unlocked, along with half of the 100 cc level), they are sweet, fluffy, and overall v. tasty. The PC boys wolfed them down, and then I had inquiries about the recipe.
So I thought I would share it. But she lies; I only get 16 cupcakes, not 24 or 18, and it seems most people do as well.
Recipe!
1 ½ sticks of unsalted butter
1 ¾ cups of sugar
Beat well, then add:
Add 2 large eggs
2 Teaspoons of pure vanilla
½ teaspoon of salt
2 ½ teaspoons of baking powder
2 ½ cups of flour
1 ¼ cups of milk
Beat well, fill cups, and bake at 375 degrees (I bake at 350, because my stove can be fickle) for 18-20 minutes. You should get 24. I get 18, 'cause I'm doing something wrong.
This is what unicorn poo looks & tastes like! (except the icing. It's just kind of gross.)

Oh man, they are some good looking cup-cakes. I'm going to bake them for my tribe and go for the mother of the year award.
